How To Make Ayam Betutu

If we walk into Bali Island, we must to try one of Bali cuisine it is a Ayam Betutu. Ayam betutu made from chiken or duck flavored. after chicken or duck mixed with herbs, chicken will be roasted with fire chaff. The following are the steps to make ayam betutu.

Material:
1. 1 whole (1 ½ kg) of chicken
2. 100 gr young cassava leaves, boiled
3. until soft, squeeze, cut into pieces
4. 5 tablespoons oil, for sauteing
5. banana leaves / aluminum foil, to wrap


Spices that are:

1. 7 fruits and 5 red chili pepper
2. 5 hazelnuts, roasted
3. 10 pieces of red onion
4. 1 teaspoon shrimp paste
5. 5 pieces of garlic
6. 1 tablespoon coriander, roasted
7. 1 ½ tablespoon lemon grass, finely sliced
8. 2 rounded teaspoon pepper
9. 1 teaspoon chopped galangal
10. ½ teaspoon nutmeg powder
11. 2 teaspoons chopped turmeric
12. 4 lime leaves
13. 2 teaspoons chopped ginger
14. 2 teaspoons chopped kencur
15. Salt and sugar according to taste

Directions:

  1. Stir-fry ground ingredients until fragrant and dry. Remove and let cool. Divided into two parts.
  2. Mix one part spice with cassava leaves. Enter the body cavity of chicken, pin holes with a toothpick. Rub the remaining seasoning on the chicken surface and under the skin.
  3. Wrap with several layers of banana leaves, tied tightly with rope. Bake in hot oven 180 ° C, for 2-3 hours until cooked.
  4. Remove, cut into pieces and serve.

Note: before baking, can also be steamed in advance ± 45 minutes, then baked for 1 hour.
